The Easiest Protein-Rich Cheesecake (That kids actually eat)

I feel like protein has become one of those things that a lot of parents worry about… especially when your child goes through a picky phase.
Some days it feels like they’re eating everything, and then suddenly… nothing you offer seems to work.
And in the middle of that, you’re just trying to make meals happen without spending hours in the kitchen.
If you’re anything like me, you don’t have the time (or energy) to be making complicated recipes every day.
That’s why I love having a few simple, nourishing options like this one.
This cheesecake is one of those recipes that feels like a treat, but is actually doing a lot more for your child nutritionally.
It’s soft, easy to eat, naturally sweetened, and rich in protein — which makes it perfect for snacks, breakfast, or even dessert.
Why I make this often
This is one of my go-to recipes when:

Ingredients

850g ricotta cheese

5 eggs

2/3 cup maple syrup

Grated zest of 1 lemon

1 teaspoon vanilla extract

1 tablespoon arrowroot flour
Method

Preheat your oven to 180°C (360°F).

Add all ingredients to a blender

Blend until the mixture is smooth and fully combined.

Pour into a lined or greased baking dish.

Bake for 45–55 minutes, or until the centre is just set.

Let it cool before slicing — it will firm up as it cools.

We often think that feeding our children well requires specific skills or a lot of time involved in the kitchen.
